In response to the increasing demand for ginjo sake, yeast 1801 has been circulating since 2006. Yeast 1801 has a great reputation, with all the daiginjo showcased at the National New Sake Evaluation being from the 1801 brewery, winning gold medals.
Currently, it is overwhelmingly prominent as the yeast for daiginjo sake. Junmai daiginjo is polished to a rice milling ratio of 40% and undergoes long fermentation at low temperatures.
It has a refreshing taste with no unpleasant flavors, characterized by rich fruity notes, intense aroma, and sweetness. It won the “Gold Award” in the “Premium Daiginjo Category” at the “2020 Sake Cup Delicious Sake Awards.”
